Stir-Fried Squid

Finely cut squid makes this elegant stir-fry dish from Chef John a feast for the eye as well as for the palate.

Ingredients:
  • 8 oz. Cleaned Squid
  • 1 oz. Bok Choy
  • 0.5 tbsp. Fresh Garlic Clove, Minced
  • 1 tsp. Salt
  • 1 tsp. Sugar
  • 1 tsp. White Pepper
  • 2 tsp. Corn Starch
  • 0.25 cup Water
  • 1 tbsp. Cooking Wine

Score the squid with a crisscross pattern: put squid meat skin side down, cut about ¼ inch wide strips crosswise, do not cut through, about ½ or ¾ the way deep into the squid flesh.

Then to create crisscross pattern, cut diagonal lines about ¼ inch apart and tilt knife about 45 degree horizontally from end to end. Cut squid into about 2 inch pieces crosswise.

Shred Bok Choy green leaves into thin strings.

In a large pot, bring water to boil and add cooking wine. Quickly blanching squid in boiling water. The pieces will curl up.

Add cold water, then take them out and set aside.

Combine salt, sugar, white pepper, corn starch, water and cooking wine in a small bowl, mixing till starch is completely dissolved.

In a large wok, add enough cooking oil for deep frying. Deep fry bok choy greens and squid pieces.

Leave small amount oil in the wok, stir in garlic until fragrant, add squid pieces and cornstarch mixture and stir fry for a few minutes.

Serve with squid over fried bok choy greens.
