Ingredients:
  • Soybean pudding
  • 8 oz. Soybean
  • 2.2 lb. Water
  • 2 tbsp. Food-grade Gypsum powder
  • Ginger Syrup
  • 1 oz. Ginger, thinly sliced
  • 10 oz. Water
  • 0.25 tsp. Salt
  • 1 cup Brown sugar
  • 1 oz. Dried black fungus
  • 1 oz. Dried lily flowers
  • 1 oz. Dried shiitake mushrooms
  • 1 tsp. Garlic, minced
  • 2 cup Chicken broth
  • 1 tbsp. Soy sauce
  • 0.5 tbsp. Oyster sauce
  • 1 cup Sugar
  • 1 tsp. Sesame oil
  • 1 tbsp. Green onion, finely chopped
  • 3 tbsp. Slurry ( a mixture of equal parts of starch and water)

Soak soybeans in cold water for 4 hrs. Drain and discard the water.

Put soybeans and 1200g water into a blender, and blend at high speed until smooth.

Filter the liquid by using filter cloth.

Bring the filtered liquid to a boil on low heat. Constantly stir to prevent stick and burn on the bottom of the pot. Remove any foams on top. Remove from heat as soon as it reaches the boiling point.

In a large mixing bowl, dissolve food-grade Gypsum powder in a tablespoon of water first. Then pour the hot soybean milk into the bowl. Cover with a plastic wrapper, and let it stand for 20 mins. The basic soybean pudding is done. (You can find soybean pudding in Asian supermarkets)

In a cooking pan, add ginger, water, salt, and brown sugar. Bring to a boil, and continue boiling for a few minutes. Remove from heat.

Pour the ginger syrup on top of a cup of basic soybean pudding.

Soak dried lily flowers, shiitake mushrooms, and black fungus for 2 hours in separate bowls until soft. Squeeze out water and cut them into fine strips

In a cooking pan over high heat, add two tablespoon oil, and sauté garlic until fragrant. Then add the lily flower strips, mushroom, and black fungus. Stir fry for a few minutes.

Add in chicken broth, soy sauce, oyster sauce, sugar, and starch slurry. Stir until bubbling.

Add sesame oil, green onions. Serve on top of a cup of basic soybean pudding.
