Smoked Pomfret

Smoke a pomfret is easier than you think. Chef John has the omnipotent wok to get the wondrous smoking flavor. This fish recipe will save you tons of time and effort.

Ingredients:
  • 10 oz. White Pomfret
  • Marinade
  • 8 pieces Ginger Slices
  • 2 stalks Green Onions, Cut Into 1-Inch Pieces
  • 1 tbsp. Soy Sauce     
  • 0.5 tbsp. Oyster Sauce
  • 1 tbsp. Shaoxing Wine
  • 0.5 tbsp. Honey
  • 3 oz. Sugar Cane Leaves, Cut Into Small Pieces 
  • 2 oz. Brown Rice   
  • 1 oz. Tea
  • 2 oz. Brown Sugar

Remove fins, head, and tail, then cut the fish into 4 large pieces crosswise.

in a mixing bowl, marinate the fish with 5 large ginger slices, green onions, cut into 1-inch pieces, soy sauce, oyster sauce, Shaoxing wine, and honey for 2 hours.

Preheat an oven to 350°F/180°C, and bake the marinated pomfret for 30 minutes.

In a wok, add sugar plant leaves, tea leaves, brown rice, and brown sugar. Stir to mix well.

Heat to smoking, place a rack in the wok, place fish on the rack, cover the lid for 10 minutes. (This smoking process gives the fish meat better texture and add more flavor.)
