Ingredients:
  • 3 oz. Yellow Croaker
  • Marinade
  • 0.25 tbsp. Salt, A Pinch
  • 1 count Egg White
  • 1 tbsp. Cornstarch
  • 1 tsp. Edible Alkali Powder, (Optional )
  • 3 oz. Wild Shepherd’s Purse, Finely Chopped
  • 1 tbsp. Cooking Oil
  • 1 tbsp. Ginger, Sliced
  • 0.25 cup Carrot, Sliced
  • 0.5 cup White Button Mushroom, Sliced
  • 1 tbsp. Shaoxing Wine
  • 3 cup Water
  • Seasoning
  • 0.25 tsp. White Pepper
  • 0.25 tsp. Salt
  • 1.5 tbsp. Cornstarch Water (2 Tbsp Cornstarch Mixed With 1 Tbsp Water)
  • 0.5 tbsp. Chef Made Assorted Aroma Oil (See ''Chef John Signature Oil'' Video)

Prepare the fish meat chunks. Remove the yellow croaker’s internal organs, head, and tail. Slice the fish into two halves, and remove bones. Cut each fillet into 2 pieces.

Marinate the fish by mixing with salt, egg white, and cornstarch.

Clean the freshly picked wild shepherd’s purse by removing the yellow leaves and roots, then water blanch quickly. (Tip: add a pinch of edible alkali powder in the boiling water before adding green vegetables, the edible alkali powder can help locking the chlorophyll moisture inside to keep them greener. You can substitute alkali with a few drops of cooking oil.)

Cool down the shepherd’s purse in the cold water, drain it and squeeze the water out.

Chop the shepherd’s purse into small pieces.

Water blanch the yellow croaker and set aside.

In a cooking pan, add cooking oil, ginger slices, carrots, mushrooms, Shaoxing wine, some water, and the chopped shepherd’s purse, bring to boiling.

Then add a pinch of white pepper, a pinch of salt, and the yellow croaker, stir and cook for 2 minutes, add the slurry to thicken until reaching the desired consistency.
