Ingredients:
  • For the Blender
  • 1 medium Avocado
  • 1 sprig Fresh Basil
  • 1/3 cup Fresh Dill
  • 1/3 cup Yogurt
  • 1 tbsp. Lemon Juice
  • 1/4 cup Olive Oil
  • 1/4 tsp. Ground Salt
  • 1/8 tsp. Ground Black Pepper
  • 1 tbsp. Water
  • For Marinate Salmon Fillet
  • 1 fillet Salmon Fillet
  • 1 tbsp. Worcestershire Sauce
  • 1 tsp. Light Soy Sauce
  • 1 tsp. Granulated Sugar
  • 1/4 tsp. Ground Black Pepper
  • 2 stalks Asparagus
  • For Sear Salmon Fillet
  • 1 tbsp. Olive Oil
  • 1 stalk Green Onion
  • 2 slices Fresh Ginger
  • For Side Vegetables
  • 1/2 tbsp. Olive Oil
  • 2 cloves Garlic
  • 1/5 cup Fresh Shiitake Mushrooms
  • 2 tbsp. Butter
  • 3 stalks Red Chard
  • 1/4 tsp. Ground Salt
  • 1/8 tsp. Ground Black Pepper
  • For Garnish
  • 1 tbsp. Butter
  • 1 pinch Pink Peppercorn
  • 2 slices Red Sorrel

In a blender, add avocado, basil, dill, yogurt, lemon juice, olive oil, salt, black pepper and water, and blend it. Should be thick and smooth. Transfer to a bowl.

In a baking dish or bowl, pour over the salmon the Worcester sauce, soy sauce, sugar and pepper, coat both sides with sauce. Marinade for 10 minutes.

Prepare vegetables, peel the asparagus stems, and cut the asparagus in half, place on a plate. Place 10-11 mushrooms on plate. Remove the leaves from to stalks of red chard out, and place on plate, set aside.

Heat a large skillet and add oil. Once hot, add salmon.

Cut scallion roots off scallion and cut in half. Peel ginger and cut 2 slices Add scallion, ginger and butter. Cook for 5 to 6 minutes on each side.

Meanwhile, heat another large skillet, and add oil then garlic.

Stir and add the mushrooms, chard stems, and asparagus. Add salt and black pepper to taste, and butter.

To serve, place the salmon on top of the mushrooms.

Arrange the asparagus and red chard next to the salmon. Spread the avocado dressing over the salmon.
