Ingredients:
  • 8 oz. Chicken Leg Quarters
  • 3 oz. Sliced Shallots
  • 3 oz. Cherry Tomatoes, Cut in Half
  • 2 oz. Garlic
  • Seasoning
  • 2 tsp. Salt
  • 2 tsp. Black Pepper
  • 2 tbsp. Olive Oil
  • 0.5 count Fresh Lemon Juice
  • 2 stalks Rosemary
  • 2 stalks Thyme

Make a few cuts to each chicken leg quarter.

In a baking tray, add the sliced Shallots, cherry tomatoes, garlic, salt, a little olive oil and mix well.

Lay the chicken leg on top. Squeeze the lemon juice and sprinkle salt,  ground black pepper, olive oil onto the chicken leg. Add Rosemary and Thyme in the baking tray.

Bake in the oven for 40 minutes at 350 °F / 180 °C
