Ingredients:
  • For the Red Tuna
  • 4 count Pieces of thick red tuna fillet (80g / 2.8oz each)
  • 4 count Lemongrass string
  • 4 count Lemongrass stick
  • 90 g Honey
  • 64 g Soy sauce
  • 4 tsp. Five spices seasoning
  • 80 g Passion fruit juice
  • 1 tbsp. Chili chopped
  • For the Bok choy
  • 7 oz. Bok choy boiled
  • 2 tbsp. Peanut oil
  • 2 tbsp. Soy sauce
  • For the Passion fruit sauce
  • 10 count Passion fruits
  • 2 tbsp. Shallot minced
  • 30 ml Peanut oil
  • 4 tsp. Five spices seasoning
  • 2 cup Green tea
  • 4 tsp. Fish sauce
  • 1 pinch Marinated juice (From the Red Tuna)
  • 1 tbsp. Chili chopped
  • 1 pinch Salt, to taste
  • 1 pinch Pepper, to taste

Preparing tuna fillet: Cut the lemongrass to have a pointy head and put it in the tuna fillet. Use the leafy part of lemongrass to tight around the fillet to make it nicer.

Marinating tuna fillet: Put the tuna fillet in a small bowl. Add soy sauce, passion fruit, honey, and minced chili. Marinate the fillet for about an hour.

Sauteing veggie: Heat up a pan on medium-high heat with some olive oil. Add bok choy which has been blanched and a little fish sauce. Saute for 30 seconds, take it out and set aside.

Pan-searing tuna fillet: In the same pan, add the tuna fillet and pan-sear until the outside of the tuna is caramelized and the fish is still rare. Add more olive oil/ peanut oil if needed. Take out and set aside.

Making the sauce: Using the same pan, add minced shallots, olive/peanut oil, 7 spice mixture, passion fruit, green tea and season with some fish sauce. Add some minced chili for a little kick. Then, pour the rest of the marinade sauce in. Stir well. Add the tuna back in for 30 seconds so the sauce can coat the whole tuna fillet.

Plating: Cut passion fruit in half and put ½ of it on a plate. Lay on some bok choy next to it, and place the tuna fillet on top. Drizzle the sauce on the fillet. Sprinkle some pepper and dry tea leaves. Add a lemongrass leaf for decoration.
