Pork-Stuffed Bell Peppers

These easy stuffed peppers are sweet and tender and packed of pork stuffing with ginger and green onions. They are incredibly satisfying and delicious.

Ingredients:
  • 2 blocks Pork belly
  • 1 tbsp. Ginger
  • 1 stalk Scallion
  • 1/2 tsp. Ground salt
  • 1/2 tsp. Ground black pepper
  • 2 tsp. Soy sauce
  • 1/3 cup Water
  • 1 tbsp. Corn starch
  • 3 large Green pepper
  • 1 tbsp. Cooking oil
  • 3 cloves Garlic
  • 1 tbsp. Ginger
  • 1 stalk Scallion
  • 2 tbsp. Sugar
  • 2 tbsp. Balsamic vinegar
  • 1 cup Chicken broth
  • 1/2 tsp. Ground salt
  • 1/4 tsp. Ground black pepper
  • 2 tsp. Corn starch
  • tbsp. Water

Mince the pork belly and add to a large bowl.

Add minced ginger and chopped green onions; season with salt and black pepper.

Add soy sauce and water, mix with hand, then add cornstarch; mix well.

Cut the ends of bell peppers, remove the seeds and stem inside the peppers.

Fill the peppers with minced pork, set aside.

Heat a small saucepan until the oil is hot, deep fry each stuffed pepper individually. Once blistered, take out from the oil and transfer to a large bowl.

In a medium cast-iron skillet, heat oil and add chopped garlic, sliced ginger, and choped green onions.

Stir until fragrant then add sugar; continue to stir until the sugar melt. Then add balsamic vinegar and chicken stock; season with salt and black pepper.

Add in the stuffed peppers, cover and simmer for 6 minutes.

Transfer the stuffed peppers to a plate.

Strain the juice to a small saucepan, add cornstarch slurry. Reduce until the sauce thickens.

Pour sauce onto the plate.

Add the stuffed peppers and pickled daikon on top. Garnish with pea shoots, red chili slices, and sesame seeds.
