Pork Ribs Lotus Root Soup | Chef John’s Cooking Class

Ingredients:
  • 2 qt. Boiling water
  • 1 lb. Pork ribs
  • 1 tbsp. Shaoxing wine
  • 2 stalks Green onions, cut into 1/2 inch pieces.
  • 8 oz. Lotus root
  • 1/2 cup Dried jujube
  • 1/4 cup Lotus seed
  • 1 tsp. Salt
  • 1 tbsp. Dried goji berries

Cut lotus root crosswise into 0.33mm thick slices, then soak them in cold water. Set it aside.

Boil pork ribs: In a cooking pot, add pork ribs and cold water to completely emerge the ribs. Turn the heat to high, bring it to a boil, turn off the heat at once. Drain and rinse to clean.

In a medium stockpot over high heat, add 2QT water, bring it to a boil. Add Shaoxing cooking wine, pork ribs, green onion, lotus root slices, dates, and lotus seeds, cover with the lid, turn the heat to low, then simmer for 90 minutes. Add salt and Goji berry in the end.

Final Notes
Boil the ribs to remove blood, otherwise, the broth will be cloudy. Don't cut the lotus slices too thick, otherwise, its flavor will not come out. It is better to simmer for at least 2 hours.
