Porgy with Tomato and Wine Sauce Over Garlic Bread

If you like red snapper, then you’ll like porgy, a white-fleshed fish with a sweet, light taste, and edible skin. Thus, no descaling. French garlic bread is topped with the prepared fish which is cooked in a tomato and white wine sauce, fresh cilantro, mint leaves, and red pepper flakes.

Ingredients:
  • For Sear The Fish
  • 1.5 lb. Whole Porgy
  • 1/5 tsp. Salt
  • 1/8 tsp. Black Pepper
  • For The Fish Sauce
  • 3 tbsp. Olive Oil
  • 1/4 cup Shallot
  • 4 cloves Garlic
  • 1 cup Grape Tomatoes
  • 1 tsp. Red Pepper Flakes
  • 1/4 cup White Wine
  • 1 tbsp. Fish Sauce
  • 1 tsp. Sugar
  • to taste Black Pepper
  • 1 tsp. Soy Sauce
  • 1 tsp. Lime Juice
  • For The French Bread
  • 46 slices French Bread
  • 1 clove Garlic
  • 1 tab Butter
  • 1/2 tbsp. Olive Oil
  • For Garnish
  • 1/3 cup Fresh Cilantro
  • 1/4 cup Fresh Mint Leaves

Fillet fish. Cut head off and then cut into 4 or 5 pieces.

Place fish into a baking dish, and add a pinch of salt and pepper.

Cut tomatoes in half by method shown on video: Use two plates, turn one upside down, place tomatoes in the center.

Take the other plate and place upright on the tomatoes. Hold down the top plate slightly and cut in the middle of the tomatoes.

Thinly slice shallots, and peel and slice garlic. In a cast-iron skillet, add three tablespoons of olive oil and then shallots, garlic, red pepper flakes, tomatoes, white wine, fish sauce, sugar, pinch of black pepper, soy sauce, and fish, stir well.

Then add lime juice in the pan, let it come to a boil. Cover and cook for 4 minutes.

Cut bread into as many slices as fish pieces.

Ruff up a garlic clove and smear on the surface of each piece, and do the same with the slightly softened butter.

Add half tablespoon of olive oil in another skillet and place bread in. Cook until both sides are golden-brown.

Line the toasted bread in a straight row on a serving platter. On each slice, place a piece of fish with sauce. Ladle additional sauce over the surface of the bread. Top with the destemmed cilantro and mint.
