Ingredients:
  • For The Cauliflower
  • 1 large Cauliflower
  • 2 Qt Boiling water
  • 2 slices Bay leaves
  • 1 tbsp. Ground salt
  • Soak The Raisins
  • 1/2 cup Warm water
  • 2 oz. Raisins
  • Soak The Saffron
  • 1 tsp. Warm water
  • 1 tbsp. Saffron
  • Cook The Onion
  • 1 tbsp. Extra virgin olive oil
  • 1 large Onion, diced
  • 1/4 tsp. Ground salt
  • 3 medium Salted sardines
  • 1 cup Boiling water
  • oz. Toasted pine nuts
  • [For Cauliflower]
  • 1/2 tsp. Ground salt
  • 1/2 cup Boiling water
  • For The Pasta
  • 350 g Bucatini
  • 1/2 tsp. Ground black pepper
  • 1 tbsp. Extra virgin olive oil
  • Muddica Atturrata
  • 2 tbsp. Extra virgin olive oil
  • 1/2 cup Bread crumbs
  • 1/4 tsp. Ground salt
  • 1/4 tsp. Ground black pepper

Wash then cut the cauliflower into small pieces.

Soak the raisins and saffron to soften in warm water for 20 minutes.

Add the drained raisins and Saffron cook for a few minutes.

Boil the cauliflower for 20 mins in salted water with bay leaves and keep the cooking water which you will strictly use to cook the bucatini pasta.

Fry the diced onion in a pan. As soon as the onion is golden.

Add salt and salted sardines, mashing them with a spoon to reduce them to a pulp.

Add the toasted pine nuts, soaked raisins, and half of the soaked saffron and cook for a few minutes.

At this point add the boiled cauliflower and sprinkle it with salt. Mix well, frequently, and constantly with a wooden spoon until achieves the creamy consistency that you want. Add a few tablespoons of water and cook for about 10 minutes.

Cover with the lid and set aside.

At this point, cook 350 g of bucatini in the cauliflower water and set aside for 6-7 minutes.

Prep the ‘’Muddica Atturrata" which is obtained by putting a spoonful of oil in a pan with breadcrumbs, which you will toast without letting it burn, when it is well colored get off the heat.

Drain pasta and add into the saucepan, add rest of saffron, pepper and olive oil, stir well.

After it is served add some "Muddica Atturrata" sprinkle it over the pasta (the poor man's cheese, tradition says).
