Ingredients:
  • Meatball
  • 10 oz. Ground pork
  • 1/4 tsp. Salt
  • 1/8 tsp. White pepper
  • 1 tbsp. Shaoxing wine
  • 1 tbsp. Light soy sauce
  • 1/4 tsp. Sugar
  • 1 tbsp. Ginger, minced
  • 1 tbsp. Green onion, chopped
  • 1 large Eggs
  • 1/4 cup Water chestnut, diced
  • Soup
  • qt. Salted chicken stock
  • 1 lb. White gourd
  • 1 tbsp. Shaoxing wine
  • 1 tbsp. Dried goji berries
  • 1/2 tsp. Salt

Peel and remove seeds, then cut white gourd into thick round slices.

Seasoning meatball mixture. Combine ground pork, salt, white pepper, Shaoxing cooking wine, light soy sauce, sugar, minced ginger, green onion, egg, and minced water chestnuts in a mixing bowl, mix well. (Stir to mix the ground pork until it is elastic to prevent meatball breaking. )

In a cooking pot add chicken broth and bring to a boil over high heat. Set a bowl of water and a tablespoon aside. Make a meatball with your hands, then dip the tablespoon in water, place the meatball on the tablespoon, then place the meatball in the cooking pot and add Shaoxing cooking wine. Repeat this. As all the meatballs floating on the surface, remove some of the foam on the surface.

Add white gourd slices, turn the heat to low, simmer for 15-20 minutes, add goji berry. Add salt to taste in the end. Remove from the heat. (Fully cook the white ground until see-through.)
