Marbled Tea Eggs

The Chinese Tea Eggs have a beautiful marble look and full of flavors.  Simmered in a savory sauce of black tea, cinnamon sticks, peppercorns, bay leaves, and star anises, these lovely hard-boiled eggs are just so aromatic and tasty.

Ingredients:
  • 10 large Eggs
  • 0.25 cup Lump sugar
  • 2 tbsp. Salt
  • 1 tbsp. Sichuan peppercorn
  • 1 tbsp. Cinnamon stick
  • 3 piece Bay leaves
  • 2 tbsp. Star Anise
  • 2 tbsp. Black Cardamom
  • 0.25 cup Dark Soy sauce
  • 0.25 cup Black Tea leaves
  • 1 liter Water

Put the eggs into a large pot with boiling water, cook for 10 minutes. Remove the eggs. Cool them off under ice water.

Gently tap the eggs to crack them evenly all around.

In the same pot, cover the eggs with water again. Add lump sugar, Sichuan peppercorn, star anise, black cardamom, Black tea leaves and cinnamon stick. Seasoning with salt and dark soy sauce. Bring to boil and turn down the heat to simmer for 2 hours.
