Ingredients:
  • 1 lb. Lamb Chunks
  • 1/4 tsp. Sea Salt
  • 1/8 tsp. Ground Black Pepper
  • 1 tbsp. Olive Oil
  • 12.2 oz. Sweet Potato
  • 1 large White Onion
  • 1 oz. Tomato Paste
  • 1/2 cup White Wine
  • 1 stick Cinnamon Stick
  • 4 pieces Bay Leaf
  • 1/5 oz. Cayenne Pepper
  • 1/5 oz. Coriander Powder
  • 1/4 tsp. Saffron
  • 2 cup Chicken Stock
  • to taste Sea Salt
  • to taste Ground Black Pepper
  • 1 bundle Parsley

Peel and cut a sweet potato into medium chunks.

Toss the potato in olive oil and stir-fry until it turns golden. Remove and set aside.

Season lamb with salt and pepper, marinade for 10 minutes.

Sauté in olive oil until golden. Remove and set aside.

Roughly chop an onion and sauté in the same pan to absorb the meat flavor.

Add tomato paste, white wine, cinnamon stick, bay leaves, cayenne pepper, coriander powder, and saffron.

After everything is well-combined, add the lamb and sweet potato back to the pan.

Add in chicken stock, salt and black pepper. Cover and cook for 45 minutes.
