Keto Chicken and Eggplant Sheet-Pan With Tzatziki

A Greek’s style keto dish with chicken thigh, eggplant, olives, and feta cheese. The thighs and the eggplants are marinated with olive oil, spice, and herbs. The chicken thighs and the eggplants are roasted in the oven for 30-45 minutes until cooked to perfection. This recipe is a complete keto meal dish with vegetables, protein, healthy fats, and creamy keto tzatziki.

Ingredients:
  • Marinade -
  • 1/3 cup Olive oil (1 dl)
  • 1 tbsp. Oregano
  • 2 tsp. Chili flakes
  • 1/2 tsp. Cinnamon
  • 2 cloves Garlic, minced
  • 1 large Lemon, zest and juice
  • tsp. Salt
  • 1/2 tsp. Ground black pepper
  • 2 lb. Chicken thighs (bone-in with skin)
  • 1 lb. Eggplant, cubed
  • 8 small Cherry tomatoes
  • 2 oz. Cucumber, shredded and drained
  • 1/2 cup Greek yogurt, full fat (1.25 dl)
  • 1/2 cup Mayonnaise (1.25 dl)
  • 2 cloves Garlic, minced
  • Salt and ground black pepper, to taste
  • 1/2 cup Kalamata olives (1.25 dl)
  • 1/4 cup Fresh mint (0.5 dl)
  • 2 oz. Feta cheese (50 g)

Preheat the oven to 375°F/200°C. Set aside a baking tray or a big sheet pan lined with parchment paper.

Combine the ingredients for the marinade in a big bowl or in a plastic bag.

Add the chicken and eggplant to the marinade and toss it together so everything gets covered. Spread out evenly on the sheet pan and add the tomatoes. Bake in the oven for about 35-40 minutes or until the chicken is cooked all the way through and the skin is crispy.

To get the moisture out of the shredded cucumber, you can either squeeze it out using your clean hands or use a cheesecloth or a kitchen cloth."

In a medium-sized bowl, mix the ingredients of the tzatziki until well combined. Season with salt and pepper to taste. Set aside.

Remove the sheet pan from the oven when done. Spread out the olives and crumble the feta cheese on top and garnish with fresh mint. Serve with the tzatziki.

Tips: If you want the tomatoes to be firmer, you can put them in the oven for the last 10 minutes or add them fresh before serving.
