Halloumi Waffle With Avocado Mash and Spicy Pickled Cucumber

Halloumi is a type of cheese that has a mixture of softness, saltiness, and stringy texture. An excellent choice in creating a lovely crispy cheese at home. It can be eaten raw but, most of the recipes for this type of cheese are being cooked, and it’s just tempting not to dive in it. Halloumi can become rubbery if you don’t know how to cook it correctly; the good thing is that this recipe will guide you on how to nail a perfect halloumi waffle! You have to try this crispy salty waffle with a light, fluffy, slightly spicy avocado mash and a nice acidic pickled Swedish cucumber. This halloumi waffle is the perfect appetizer to make for your friends and family. An easy and quick lunch at home when you are working. A two-ingredient waffle and topped with an avocado mash with white peas that you can replicate at home. Adding a pickled cucumber at the end will elevate the flavors to another level.

Ingredients:
  • Avocado Mash
  • 1 piece Avocado
  • 100 g White beans, cooked
  • 1 piece Jalapeno
  • 1 piece Lime
  • 1 pinch Salt
  • Halloumi Waffle
  • 250 g Halloumi
  • tsp. Potato flour
  • Pickled Cucumber
  • 1 piece Cucumber
  • 1 piece Red chili
  • 1 tsp. Salt
  • Pickle juice
  • 100 g Swedish vinegar
  • 200 g Agave syrup
  • 200 g Water
  • Garnish
  • 30 g Cilantro

Peel cucumber and slice in half. Remove the core and seeds by scooping them out, then slice thinly (1/10 inch/3 mm) on a mandolin. Put in an airtight glass jar with salt and shake it so the salt evens out.

Slice the chili into thin rings and put it in the same jar.

Bring vinegar, agave syrup and 1/3 water to a boil. Leave to cool to room temperature. Pour the liquid over the cucumber with the remaining 2/3 water and close the lid.

Cut the avocado in half and remove the pit. Scoop out straight into a blender together with lime juice, a chopped jalapeno, a pinch of salt and beans. Mix until smooth.

Grate the halloumi and put the cheese in a plastic container with a lid but without closing it. Add the potato flour, close the lid and give it a good shake.

Start the waffle iron and put on medium heat. Add half of the cheese to the iron and press down. Cook until golden. Time varies from iron to iron.

Top with avocado mash, spicy cucumber and cilantro.
