Ginseng Chicken Stew | Chef John’s Cooking Class

Ginseng, along with jujube (Chinese red dates) and goji berries are used in this healthy Chinese ginseng herbal chicken soup that tastes great and very easy to prepare. It’s golden color, deliciously fragrant, rich ginseng aroma, and full of nutrition.

Ingredients:
  • 1 whole Chicken (old hen)
  • ½ cup Dried jujube
  • 1 stalk Ginseng
  • 5 slices Polygonatum odoratum slice
  • 3 slices Dried chinese yam
  • 2 tbsp Dried longan
  • qt. Warm water
  • ½ tsp Salt
  • 1 tbsp Dried goji berries

Bring a pot of water to a boil, put the whole chicken into the boiling water for 1-2 minutes. Remove from the pot and clean with water. (Choose an old chicken. It tastes better.)

Place the chicken in a clay pot, add ginseng, dried jujubes, Polygonatum odoratum slices, dried Chinese yam slices, longans, add lukewarm water. Then cover with the lid. Cook over low heat for 2.5 -3 hours. Add salt to season, and add goji berries in the end.
