Ingredients:

  • 2 Qt Water
  • 1/4 tsp. Salt
  • 1/8 tsp. Baking Soda
  • 9 oz. Broccoli
  • For The Mushroomㅤ
  • 1 tbsp. Cooking Oil
  • 2 oz. Beech Mushroom
  • 2 oz. White Beech Mushroom
  • ㅤFor The Garlic
  • 4 cloves Garlic Cloves
  • 1 tsp. Cooking Oil
  • 1 small Mini Sweet Bell Peppers
  • ㅤSeasoning
  • 1 tsp. Shaoxing Wine
  • 3 tbsp. Chicken Broth
  • 1/4 tsp. Salt
  • 1/2 tsp. Sugar
  • 2 tbsp. Cornstarch Slurry (1 to 2 Ratio of Cornstarch to Water)

Cut broccoli into florets, stems peeled and sliced

Slice garlic cloves, cut mini bell peppers into circles, cut off mushroom's (white beech mushroom and brown beech mushroom) firm portion base, discard.

In a pot, bring enough water to a boil, add a pinch of salt and a pinch of baking soda, then add broccoli into the boiling water for 2-3 minutes.

Remove broccoli from boiling water, put them into a bowl of ice cold water to release the heat and keep the green color.

In a cooking pan over hight heat, add cooking oil, add mushrooms, stir fry for 2-3 minutes until fragrant.

Push the mushrooms to one side of the pan, add garlic slices and a little bit of oil to the another side, stir fry until fragrant, then add mini bell pepper, Shaoxing cooking wine, chicken broth, salt, sugar and broccoli, quickly stir several times.

Add slurry and stir to coat evenly. Remove from heat and serve.

Do not keep the broccoli in boiling water for over 3 minutes. To maintain broccoli fresh green color, keep broccoli in ice cold water until they are completely cool. Make sure the mushrooms are full cooked and fragrant. Stir fry quickly to prevent vegetables become yellow and lost their nutrients.
