  • 9 oz. Cuttlefish Fillets, Cleaned
  • 1 oz. Butter
  • 2 oz. Red And Green Peppers, Diced
  • 3 tbsp. Cooking Oil
  • Marinade
  • 1 tsp. Salt
  • 2 tbsp. Custard Powder
  • 1 tbsp. Corn Starch
  • 1 count Egg

Place the cuttlefish on a cutting board skin side down, cut the cuttlefish fillet in the middle lengthwise. Score straight lines lengthwise in ¼-inch apart, then cut crossing the score lines into ¼-inch wide strips.

In a mixing bowl, combine cuttlefish strips with A pinch of salt, 2tbsp/20g custard powder, 1tbsp/10g starch, and 1 egg. Toss to coat evenly.

Dice red and green peppers.

In a cooking pan, bring enough oil to 200°F/100°C, deep-fry the battered cuttlefish strips until golden. Remove from oil and drain. Wait about 1 minute when the oil temperature goes up a little higher.

Quickly re-fry to give the cuttlefish a crispier texture and less greasy. Remove from oil and drain.

Return the pan to heat, add butter, diced red, and green peppers. Stir-fry until fragrant.

Add fried cuttlefish strips and a pinch of salt. Stir several times until evenly mixed. Serve hot.

Custard powder is usually made with milk powder, cornflour, vanilla powder, icing sugar, fIne salt, and yellow food coloring. It's available in most supermarket.
