  • 【Pulled noodles】
  • 12 oz. All Purpose Flour
  • 1 tsp. Salt, Pinch
  • 1 cup Water
  • 1 tbsp. Cooking oil
  • 【Sauce】
  • 1 tbsp. Minced Garlic
  • 1 tbsp. Minced Green Onion
  • 1 tsp. Salt
  • 1 tbsp. Chili Powder
  • 0.5 cup Cooking oil, heated before serving
  • 1 tsp. Sweet black rice vinegar
  • 0.5 tbsp. Soy Sauce

On a working surface, mix flour, salt and water; knead into a dough. Cover dough and set aside for 30 minutes. Then knead the dough again until the surface is smooth.

Divide it into 4 equal pieces.

Roll each piece into an oval-shaped thick piece.

Brush oil on top, and stack them together, then cover and refrigerate for 2 hours.

Take out from refrigerator, roll out an oval piece along long side until it is about 1 foot long. press roller along the centerline to make it thinner. Using both hands carefully pull both ends of a flat piece out and swing it up and down making it thinner and thinner.

Drop long noodles into a pot of boiling water. Cook until it done. Then take noodles out and raining under running cold water.
