Cola Pork Ribs

Ingredients:
  • 2 lb. Pork Rib
  • 5 Stalks of Large Green Onion
  • 1 oz. Ginger, Sliced
  • 3 oz. Rock Sugar
  • 1 can Cola
  • 2 tsp. Shaoxing Cooking Wine
  • 1 tbsp. Soy Sauce
  • 1/2 cup Apple Cider Vinegar
  • 1/2 cup Sweet Black Rice Vinegar
  • 1 cup Cold Water
  • 1 tsp. Salt
  • 1 tsp. Cinnamon Powder
  • Half Lime, juiced
  • 1/2 cup Sweet Black Rice Vinegar

Cut the ribs into pieces.

In a large, sturdy pot, heat 1 1/2 inches of vegetable oil to 250°F-300°F/120°-150°C.

Fry the ribs until golden brown, about 2-3 minutes. Transfer the ribs to paper towels to drain briefly.

In a large saucepan, place the ribs at the bottom and add green onion, ginger, rock sugar, and cola. Bring it to a boil on medium-high heat. Then, add Shaoxing wine, soy sauce, apple cider vinegar, 1/2 cup sweet black rice vinegar, and water. Turn up the heat and bring everything to a boil, then add salt and cinnamon powder to taste.

Cover and simmer on low heat for 30-40 minutes.

Take off the lid and turn up the heat. Add 1/2 cup sweet black rice vinegar and lime juice, stirring continuously until the sauce has thickened and the ribs are coated and sticky.
