Ingredients:
  • 2 oz Minced Shallots [Marinade]
  • 1 oz Minced Garlic [Marinade]
  • 2 tbsp Minced Ginger [Marinade]
  • 1 tbsp Red Fermented Rice (Fermented With Monascus Purpureus) [Marinade]
  • 1 tsp Five-Spice Powder [Marinade]
  • 0.25 cup Rice Wine [Marinade]
  • 1 tbsp Soy Sauce [Marinade]
  • 3 tbsp Sugar [Marinade]
  • 1.5 tbsp Hoisin Sauce [Marinade]
  • 1 tsp Salt [Marinade]
  • 1 cup Maltose [Marinade]
  • 3 stalks Green Onion [Marinade]
  • 2.2 lb Boston butt
  • 3 counts Egg
  • 7 oz Egg Noodles
  • 2 tbsp Shaoxing wine
  • 1 oz Julienned Carrots
  • 1 oz Julienned Purple Cabbage
  • 1 oz Julienned Cabbage
  • 2 oz Broccoli
  • 0.1 tbsp Chef John’S Aroma Oil
  • 1 tbsp Oyster Sauce
  • 1 tbsp Soy Sauce
  • 0.5 count Lemon

In the blender, add roughly cut shallots, blend it to fine pieces. Transfer to a big mixing bowl.

Use the blender to mince garlic and ginger to fine pieces. Add them into the same mixing bowl.

In a grinder, add red fermented rice, grind it into powder form. Add to the same mixing bowl.

In the mixing bowl, add five-spice, rice wine, soy sauce, sugar, hoisin sauce, salt, maltose, and scallion segments. Mix well.

Coat the pork belly with all the marinade ingredients in the mixing bowl, and leave it for 3 hours.

Preheat oven to 350°F / 180°C, roast the pork belly for 15 minutes, then flip it over, brush with marinade, and roast for 15 more minutes or until it is fully cooked.

In the mean time, in a wok on high heat, add chef John’s aroma oil and eggs; stir fry the egg, add cooked egg noodle; add chef John’s aroma oil, carrot, purple cabbage, cabbage, and broccoli. Stir fry for 5 seconds, season with oyster sauce and soy sauce, squeeze some lemon juice, and toss well.

Plate the egg noodles with vegetables in a serving bowl, and top with 3~4 slices of BBQ pork.
