  • 2 tbsp Olive Oil
  • 3 large Egg
  • 1 tbsp Shaoxing wine
  • 8 oz. Celtuce, sliced
  • ¼ tsp Ground salt
  • ¼ tsp Sugar
  • 2 tbsp Water

Julienne celtuce, beat eggs.

In a large cooking pan over high heat, add oil and egg liquid, don't stir at once to prevent the fried egg from breaking into small pieces. When egg liquid becomes solid, gently turn it over and stir fry until golden, then cut it into large pieces by using a spatula. Add Shaoxing cooking wine to enrich the flavor and remove odor smell. continually Add julienned celtuce, salt, and sugar to taste. (The sugar is for umami flavor), add a little water to cook faster. Stir to mix well.

Cut celtuce as the same size as possible, otherwise, it will taste uneven. Fry the egg until fragrant and golden.
