  • 9 oz. Ground Chicken
  • 9 oz. Shrimp, Peeled And Finely Chopped
  • Meat Balls Seasoning
  • 1.5 tbsp. Soy Sauce
  • 2 tbsp. Brown Sugar
  • 0.5 oz. Ginger, Finely Chopped
  • 0.5 oz. Scallions, Finely Chopped
  • 0.25 tsp. Black Pepper
  • Snail Meat Ball
  • 15 count Sea Snail, Cooked And Removed The Shell
  • 5 oz. Ground Beef
  • 1 oz. Carrot, Finely Chopped
  • 0.5 oz. Cilantro, Finely Chopped
  • 2 oz. Onion, Finely Chopped
  • 1 tbsp. Soy Sauce
  • 1 tsp. Black Pepper
  • 1 large Egg
  • 5 oz. Garlic Cloves
  • Sauce
  • 0.5 oz. Red Chili
  • 0.5 oz. Green Chili
  • 2 tbsp. Shaoxing Cooking Wine
  • 16 oz. Beer
  • 2 tbsp. Soy Sauce
  • 1 tbsp. Seafood Sauce
  • 0.25 tsp. Sugar
  • 0.25 tsp. White Pepper
  • 1 tsp. Black Pepper
  • 3 tbsp. Cornstarch Water (2 Tbsp Cornstarch Mixed With 1 Tbsp Water) 
  • 1 tsp. Sesame Oil

In a large bowl, mix all the [Meat Balls] and [Meat Balls Seasoning] ingredients. Combine well and marinate for 20 minutes.

In another large bowl, mix all the [Snail Meat Ball] ingredients.

Combine well and stuff into the empty snail shell.

In a large wok, heat 5 cups of vegetable oil. Deep fry the garlic cloves until golden brown. Drain and set aside.

Shape the chicken shrimp mixture into 2-inches meatball and drop carefully into the hot oil.

Cook until meatballs turn brown. Drain and set aside.

In the same wok, stir in red and green chilies.

Add fried garlic, meatballs, beer, and stuffed snails. Bring to a boil.

Add soy sauce, seafood sauce, sugar, white pepper, and black pepper.

Cook for 3~5 minutes until the sauce reduced 50%. Thicken the sauce with the Cornstarch Slurry mixture.
