Ingredients:
  • 10 oz. Salmon Fillet
  • 0.25 cup Garlic Cloves
  • 1 stalk Green, Cut Into 1-Inch Pieces   
  • 4 piece Ginger, A Few Slides
  • 1 tbsp. Cooking Wine 
  • 1 tsp. Mirin 
  • 1 tbsp. Soy Sauce 
  • 1 tbsp. Sugar 
  • 1 tbsp. Honey 
  • 1 tsp. Black Pepper, A Pinch
  • 2 tbsp. Cornstarch Water (2 Tbsp Cornstarch Mixed With 1 Tbsp Water)
  • 0.1 tbsp. Peppercorn Oil or Chef Made Peppercorn Oil (See ''Chef John Signature Oil'' Video)

Cut salmon fillet crosswise into 1.5 inch wide pieces.

In a cooking pan, heat enough cooking oil, deep fry the garlic cloves until golden, remove from oil and drain.

Return the pan to the stove, add a pinch of salt in the pan and sear the salmon skin side first, then flip over sear the other side.

Add in the following ingredients: fried garlic, ginger, green onion, cooking wine, soy sauce, sugar, honey, ground black pepper, and starch in water.

Gently shake the pan to prevent the salmon stick on the bottom until the sauce thickens to desired consistency.

Add a teaspoon peppercorn oil or Chef Made Peppercorn Oil to finish. Serve immediately.
