Ingredients:
  • lb. Lamb Shank
  • Lamb Shank Boil
  • 2 tbsp. Green Onions
  • 1 tbsp. Ginger
  • 1 tbsp. Cooking Wine
  • For Sugar Mixture
  • 1/4 cup Granulated Sugar
  • 2 tbsp. Water [Sugar Boil 1St Time]
  • 1/2 cup Water [Sugar Boil 2Nd Time]
  • Lamb Shank Stew
  • 2 tbsp. Cooking Oil
  • 1 tbsp. Ginger
  • 1 stalk Green Onions
  • 5 cloves Garlic
  • 2 tbsp. Bean Paste With Chili
  • 2 medium Star Anise
  • 1 tsp. Cinnamon
  • 2 leaves Bay Leaf
  • 1/2 tsp. Ground Salt
  • 1/2 tsp. Ground Black Pepper
  • tsp. Dark Soy Sauce
  • 1 large Potato
  • 1 tsp. Ground Salt [Potato Boil]
  • 1/2 tsp. Ground Salt [Mashed Potato]
  • 1/4 tsp. Ground Black Pepper [Mashed Potato]
  • 1/2 cup Milk
  • 1 tbsp. Parsley
  • 1/2 tsp. Lemon, Juiced
  • 2/3 cup Carrot
  • Cornstarch Slurry
  • 1 tbsp. Corn Starch
  • 2 tbsp. Water

In a saucepan, bring water to a boil. Add lamb shanks, green onion, crushed ginger, and cooking wine.

Heat a skillet, add sugar and water, and bring to a boil.

When the caramel turns slightly brown, add more water and bring it to a boil. Transfer to a bowl, set aside.

Right after the water comes to a boil, transfer the shanks to a bowl, rinse with water then transfer to a plate, and set aside.

Heat oil in a large pan. Roughly chop a green onion and crush a piece of fresh ginger. When the oil is sufficiently hot, add in the ginger and the green onion.

Add crushed garlic, bean paste with chilli, lamb shanks, star anise, crushed cinnamon sticks, and bay leaves.

Pour in the sugar water mixture, add more water to cover the lamb shanks, and season with salt and black pepper. Bring to a boil and add dark soy sauce. Lower the heat and let it simmer for 30 minutes.

Peel a potato and cut into medium-sized pieces. Transfer to a saucepan, add water and sea salt, and bring to a boil.

Once the water is boiling, lower the heat to a simmer and cook the potato until tender. Drain the potato and transfer to a bowl.

Mash the potato with a potato ricer. Season with salt and black pepper, and add the milk, chopped parsley, and lemon juice. Mix well and set aside.

Add carrots to the pan with the lamb shanks, cover, and let it simmer for 1.5 hours.

Transfer the lamb shanks to a plate. Sieve the sauce into a new saucepan. Reduce on a gentle heat and add corn starch slurry to thicken the sauce.

Add mashed potatoes to a serving plate and place a lamb shank on top. Pour the sauce over the lamb shank.

Place the carrots on top of mashed potatoes. Decorate by drizzling the sauce around the mashed potatoes. Garnish with pea shoots and edible flowers.
