This scallion beef stir fry is tender, moist, flavorful as it cooks in a sweet and savory sauce.  Best of all, you can cook this dish in 30 minutes or less.

Ingredients:
  • 10 oz. Beef
  • Marinade
  • 1 tbsp. Soy Sauce
  • 1 tsp. Black Pepper, A Pinch
  • 0.5 tsp. Sugar
  • 1 count Egg Yolk
  • 1 tbsp. Corn Starch
  • 1 tbsp. Cooking Oil
  • 1 tbsp. Chef Made Peppercorn Oil (See "Chef John's Signature Oils" Video) or cooking oil
  • 1 tbsp. Garlic, Minced
  • 3 oz. Onion, Julienned
  • 1 oz. Facing Heaven Pepper
  • 1 tbsp. Cooking Wine
  • 1 cup Water
  • 0.5 tbsp. Oyster Sauce
  • 1 tbsp. Soy Sauce
  • 0.5 tsp. Sugar
  • 1 tsp. Sweet Black Rice Vinegar
  • 1 cup Large Green Onion, Julienned
  • 3 tbsp. Cornstarch Water (2 Tbsp Cornstarch Mixed With 1 Tbsp Water)
  • 1 tsp. Sesame Oil

Slice the beef against the grain into about ½ x 1.5-inch slides

In a mixing bowl, combine beef slices with the beef marinade and mix completely. Marinate for 1 hour.

Julienne large green onion.

Slice red chili pepper in circle shape slices.

In a cooking pan over high heat, bring enough oil to 120°C-150°C / 250°F-300°F, and blanch marinated beef slices in oil until no longer pink. Remove from oil and drain. Set aside.

In a wok over high heat, add a tablespoon cooking oil, garlic, onion, red chili, and sliced red chili. Quickly stir several times.

Add a little water, oyster sauce, soy sauce, and sugar. Stir well.

Add beef, julienned green large green onion, and slurry to thicken. Quickly stir several times until well mixed, and drizzle with sesame oil. Remove from heat. Serve hot.
