Ingredients:
  • 14 oz| Beef Shank
  • 4 cup Water [Marinade]
  • 1 tsp. Salt [Marinade]
  • 0.5 tbsp. Sicuan Peppercorn [Marinade]
  • 0.25 tsp. Saltpetre [Marinade]
  • 1 tsp. Hard White Liquor [Marinade]
  • 7 oz. Beef Tender
  • 1 lb. Beef Bone
  • 1 lb. Potato, Cut Into Large Chunk Pieces
  • 3 tbsp. Cooking Oil
  • 0.5 tbsp. Sichuan Peppercorn
  • 1 oz. Tomato, Diced
  • 0.25 cup Tomato Paste or Ketchup
  • 1 tbsp. Minced Garlic
  • 0.5 tsp. Chili Pepper Powder [Seasoning 1]
  • 1 tsp. Shaoxing Cooking Wine [Seasoning 1]
  • 4 cup Beef Broth
  • 1 oz. White Button Mushroom, Sliced
  • 1 tsp. Salt [Seasoning 2]
  • 1 tbsp. Soy Sauce [Seasoning 2]
  • 1 tsp. Honey [Seasoning 2]
  • 0.5 tsp. White Pepper Powder [Seasoning 2]
  • 1 oz. Cabbage
  • 1 tsp. Chili Oil or chef-made chili oil (See "Chef john's signature oils" video)

Poke holes on all sides of beef shank.

In a large bowl, combine [Marinade] ingredients, mixing until salt is dissolved.

Marinate beef shank in the mixture for 24 hours in the refrigerator.

Bring a large pot of water to a boil. Add in the beef shank, beef tender, and beef-bone. Simmer for 90 minutes. Then take out beef shank and tender. Refrigerate for 1 hour. Save the broth for use later.

Cut beef shank crosswise into thin slices. Beef tender into about 2-inch (5-cm) long pieces.

In a heated wok with 2 cups of oil, deep fry potato until golden. Drain oil.

Return the same wok to the stove, add 2 tbsp cooking oil, peppercorns and another 1 tbsp oil. Cook at a low temperature until fragrant and take out peppercorns from the wok.

In the same wok, add tomato and stir fry until tomato is soft. Then, add ketchup, stir and cook for about 1 minute. Stir in minced garlic and [Seasoning 1], and stir to mix well.

Add beef broth, mushroom, cooked beef tender, [Seasoning 2] mix well.

In the same wok, add cabbage and chili oil. Mix and bring to a boil.

Transfer to a heated clay pot. Top with sliced beef and bring to a boil.
