  • 1 lb. Chicken Breast
  • 1 lb. Cauliflower
  • 1 tsp. Cumin
  • For the rice
  • 0.5 tbsp. Cooking Oil
  • 1 cup Basmati Rice
  • 4 clove Garlic
  • 1 tsp. Star Anise
  • 1 tsp. Cinnamon Stick
  • 0.5 tsp. Clove
  • 2 Bay Leaves
  • 0.5 tbsp. Butter
  • 0.5 tsp. Salt
  • 0.25 tsp. Pepper
  • 0.5 cup Chicken Broth
  • Stir-Fry Veggies
  • 0.5 tbsp. Cooking Oil
  • 1 tsp. Minced Garlic
  • 1 tsp. Minced Shallot
  • 30 g Baby Spinach
  • 0.3 tsp. Salt
  • For marinate paste
  • 0.5 cup Yogurt
  • 3 clove Garlic
  • 1 tbsp. Ginger
  • 0.5 tsp. Salt
  • 0.5 tsp. Pepper
  • 1 tbsp. Curry Powder
  • 1 tbsp. Turmeric Powder
  • 2 tsp. Lemon Juice
  • Sauce
  • 0.25 cup Yogurt
  • 2 tbsp. Honey
  • 1 tbsp. Yellow Mustard
  • 1 tsp. Mint
  • 2 tsp. Lemon Juice

Clean and curve the surface of chicken breast. Place on baking tray.

Cut the cauliflower into pieces. Transfer to the pot with boiling water, cook for 2~3 minutes. Drain it and place on a baking tray.

[For marinate paste] In a large bowl, put in yogurt, minced garlic, minced ginger, curry powder and turmeric powder. Seasoning with salt, pepper and lemon juice.

Spread the paste on chicken and cauliflower. Sprinkle some cumin on the top. Transfer to the oven and grill at 425 ºF / 218 ºC for 30 minutes.

[For the rice] Warm up a large pan on medium-high heat, add cooking oil, garlic, star anise, cinnamon stick, clove and bay leaves. Stir-fry for a while. Pour in rice that was clean previously, season with salt, pepper and butter. Pour in chicken broth and bring to boil, turn to low heat to simmer for 10 minutes.

Meanwhile, heat up a large skillet, and add cooking oil, minced garlic, minced shallot and baby spinach. Seasoning with salt and stir-fry well.

[For the sauce] In a small bowl, put in yoghurt, honey, yellow mustard, minced mint and lemon juice. Mix well as dressing.

Place cooked rice and veggies on the serving plate. Put the curry chicken and cauliflower on top. Baste on the dressing and garnish with mint. Enjoy!
