Fruit and Cream Mochi

Ingredients:
  • 5.25 oz. Glutinous Rice Flour
  • 2.25 oz. Sugar
  • 1.75 oz. Hot Water
  • 7 oz. Milk
  • 1 tsp. Food Coloring
  • 0.3 cup Cornstarch
  • 1.75 oz. Butter
  • 4.5 oz. Light Cream
  • 6 count Strawberries
  • 0.5 cup Mango, Cubbed
  • 0.5 cup Kiwip, Sliced

In a large pan, stir the Glutinous rice flour under low heat. Take out and cool.

In a large bowl, combine sugar, hot water, milk, food coloring, and mix well.

Add cornstarch and 125g glutinous rice flour in the milk mixture. Mix well and sift with.

Steam the flour mixture in a steamer for 30 minutes.

Transfer the steamed Mochi into a large bowl, add melted butter and mix well.

Take the hot Mochi out from the bowl onto the table liberally dusted with cornstarch. Shape into mochi sheets.

Place light cream and fruits(strawberry, mango, kiwi) on top of the mochi sheet. Lift up the mochi sheet to bring to the top and pinch them all together to seal the mochi sheet. Repeat the same process for the remaining.
